Baked Alberta Trout with a Horseradish Mustard Mouss

What You Will Need

  • 4 Whole Boneless Trout Fillets
  • 1 Fresh Lemon
  • 3 Tbsp. Olive Oil
  • 1 Tbsp. Chopped Fresh Dill
  • ¼ Cup Dry Bread Crumbs
  • 1 Cup Whipping Cream
  • 2 Tbsp. Brassica Horseradish Mustard
  • 2 Tsp. Smoked Salt Crystals
  • Salt and Pepper

1. Preheat the oven to 375F

2. Rinse the trout fillets with cold water and pat dry with paper towel.

3. Squeeze the juice from the lemon over the fillets. Brush the fillets with olive oil and season with salt and pepper. Sprinkle the fresh dill on the fillets.

4. Shake the dry bread crumbs over the fillets and place them on an oiled baking rack. Reserve.

5. In a stainless mixing bowl whip the cream to soft peeks. Fold in the Brassica Mustard Horseradish Mustard and smoked salt crystals. Refrigerate.

6. Bake the fillets in the preheated oven for 8-12 minutes.

7. Plate the fillets and dollop on the mustard mousse.
