our mustard

The sunny, cool Western prairies are ideal for growing mustard and it’s why Canada is the world’s largest exporter of this hardy brassicaceae crop. At Brassica, we start with a proprietary heirloom process, combining specially selected Alberta grown mustard seeds with other locally sourced ingredients to create distinctive prepared mustards that add bright flavor and delightful, caviar-like pop to sandwiches, sauces, vegetables and meats.

Why are we so obsessed with mustard? Because there’s nothing else like it - it is something to which other elements are compared. It is uniquely expressive and although each seed type offers a varying level of heat, each of the yellow, brown and oriental seed types can express an astonishing variety of flavours through the preparation process. Crushed, whole or ground seeds can be in a suspended germinal state for hours, days or months while in contact with a variety of vinegars, beer, wines or other flavoured liquids to activate or mute certain molecules that release flavour and aromatic profiles. And we’re always experimenting with new recipes - there is no liquid on earth that will not go under our microscope as a possible medium for mustard creation!

Beyond that, we adore the versatility that mustard offers out bodies nutritionally as it remains a source of magnesium, linked to reduced blood pressure; selenium, a natural antioxidant that may prevent and slow cancer; and omega-3 fatty acids, which may decrease risk of heart disease. Add calcium, phosphorus, and zinc to the list of other essential nutrients, and you’ll realize there’s no reason to skimp on this delightful stuff. Jars of Brassica mustards have no expiration date. High levels of acidity allow them to maintain flavour and texture indefinitely, with no health hazards.

After opening

We recommend refrigeration due to the possibility of cross-contamination by other protein and fat-based foods (butter or meat) from knives or spoons used to serve the mustard.
